First let me say you made a good choice of years. The 69's did come with a 351W so this could be the original engine. I would recommend looking at the data plate on the door to find out what options your car came with originally.

You say it dies around 100 MPH, when you say this is the engine reving high or does it sound like it has more?

When you say overheat, when does it do this? In traffic or going down the highway?

You might want to check your gear ratio, turn one of the rear tires that makes the drive shaft turn and count how many revolutions it takes for one complete turn of the wheel. If your gears are tall this might be all the speed you are going to get unless you beef up the engine.

You said that you have changed the water pump, have you had the car running with the radiator cap off you should see a flow when the thermostat opens. I know on my car my 2 row radiator would not keep up so I went with a 3 row.

I agree with checking the rear axle ratio. Could have some real low rear in it. Like 4.10 or even lower. After you find that out, you'll be able to plan your next move.
