My understanding: basically with a relay its kind of like with the starter solenoid. Instead of turning the starter from the key, the key activates a heavy duty switch. Which routes the power to the starter (or in this case the headlights) directly from the battery/alternator, bypassing the 'true" electrical system.
Not sure about the 1 wire conversion/gm possibilities, but according to my manual, the stockers were rated up to about 60 amps. I would say for a semi stock car without a lot of added electronics you would be fine with like a 90 amp alt, there are several different 3g's that might work, dont know about wiring them though.
