Since you've decided to use the late bell housing and cable clutch, the obvious answer is a Ford Racing or Centerforce clutch and pressure plate. The only thing special about this installation is to change the overcenter spring on the top of the clutch pedal. More often than not it causes problems when using diaphragm style clutches. I would replace the spring with a lower rate spring, perhaps 1/4 as strong. Leaving a spring on the pedal will ensure the pedal comes full up to the bumper and takes tension off the cable/throwout bearing.
