That's an easy one. A 2.3L manual tranny coupe. By far the lightest mustang, low 2800 pound area. Usually have better structural integrity for a race car as well because the engine is so torque-less it's unlikely that there's any frame twist. Heaviest is a 5.0L auto tranny GT convertible, i believe those are close to 3400-3500 lbs.
