Stroker Motor or not ?

I am in the planning stages of building a new motor for my 85 GT.
I am mostly gonna use it for fun at the 1/4 mile track and light street use.
My question is about stroker motors. I do not have any experience with them and was wondering what are the positives and especially what are the negatives of building and running this type of engine. Also should i go with a 302 or 351 block.
I was planning on using the TFS TrackHeat heads, TFS #2 Cam, TFS forged pistons, full roller motor., Carb with Perf RPM Intake.
I am hoping for 375 to 400 HP at the flywheel.

Go with a stroker. Example: My sons and I spent most of the past year building up a 306 for the oldest boy's 89 GT. We have about 6,000 in the engine and related pieces parts and it really runs nice. No track times but he smoked a new Vette this last time at the track before the 70 mm T'B and K&N filter. (I have pics of it)
We bought the green thing for my youngest's graduation. It has a 331 storker in it and everything else on the thing is stock except for an MSD 6AL, equal length BBK's and 3:73's. The green thing will rip the 306 a new one up to about 90 mph.
Torque is way up from the 306 and I know the F303 in the 306 has a lot to do with that but the difference in the way each one pulls is hard to believe, especially when you remember the 331 is mostly stock other than the extra volume.
If I do another small block Ford, it'll be a 331!

Stroker all the way!!! The bigger the better. I would stay away from the dual plan intakes with the extra cubes though. And i would never get a off the shelf cam for a engine that was not stock. Just my .02

Strokers are great. My 331 is fun, low compression and has already gotten me to a mid 12's @ 110 on drag radials with 1.9 and 2.0 60's. This is a mild 331 with 9.2:1 comp to boot!

So, if you're looking for 375-400 HP, the 302 based strokers (331/347 the most common) will get you there easily. The 351 based strokers will get you even more HP, but with slightly more cost and weight.

There are no real 'negatives' to Ford small block strokers as long as you use quality parts, have good machine work and a knowledgable builder.

Good luck and have fun!
