The mirror is likely connected with a quick disconnect union just inside the door it was mounted on. Disconnecting the union along with any bolts/nuts still securing the mirror will allow you to take it off. There will be an opening to water when you do this so either cover the hole or replace the mirror as soon as you get the chance.
If there isn't a quick disconnect, you can just cut the wires. You'll have to splice the new mirror's wires to your old wires so cut as close as you can to the mirror housing. You'll want to have the excess wire to work with when you splice the new mirror's wiring in.
