I'm interested in carbureting my 331. I like edelbrock but not sure what size and if I should purchase one with a electric choke or manual

Get a Vic Jr. and a holley/ barry grant. I would say no less than a 650.. but i would try a 750.
I am building a 331 right now and plan on running a 750
