Default 2.25 pipes vs 2.5 pipes

i have a 99 gt with stock exhaust except for flowmaster 40s. my 2 questions are going 2.5 pipes and high flow cats gonna make my car louder. cuz right now its not loud enough for me. and about how much power will i gain with this or loss of torque

run a 3 inch pipe from the muffler back and it will be deeper sounding
