You dont _have_ to on the springs. I dont know for sure what the V6 wieghs, but it cannot be 1/2 of a V8... My point being that maybe 100-150# lighter, not 500# lighter. Personally, if I knew the motor was comming, I would do the swap now and save time for later.
Get aftermarket shocks to work with the new rate springs, NOT KYB (crap), but Bilsteins, or Tokikos, or Koni.

Tires are the #1 ride harshness, followed by bushings, then shock/springs, so you'll be ok IMOHO.
