Most of the plastic pieces can be taken out and painted using a laquer type paint. Black is a standard color, it can be purchased at any auto paint store and some auto parts stores. Mar-Hyd is a good brand. Take them out and clean them with something like greased lightening, then wipe down with paint thinner or laquer thinner, and spray light coats until evenly coated. This is good for dash pads, kick panels, things like that.

Carpet is easy, Auto Custom Carpets has complete factory type carpet replacements for ANY car ever made. Soft trim like seats will have to be recovered. Upholstery sets may be available now at places lie 5.0 Resto or some of the Mustang Parts Stores that sell late model restoration parts.
