Default Which Carb?

I need to upgrade, the linkages on my old Carter are getting pretty loose and I think I've reached the performance limits of this carb. Lots of choices out there, which one should I go with? The rest of my mods are in my sig. It is a 5 speed and with me in it, it weighs 3250#s

Rochester 2barrell, eh? Perhaps a few strombergs or maybe I could make a custom manifold and 8 weber side drafts! Or maybe I should ditch the whole carb thing and build the first 5.0 mustang with a Hilborn mechanical fuel injection system...

I think I'll probably go with a 650 Holley DP or maybe even a 600 for better throttle response and a stronger signal.
I do like the way the Demons look though... and they seem to be strong performers.
