Post Carb size?

I've decided that my current carb is beyond repair. It's dumping huge amounts of gas into the engine, fouling plugs, idleing high, and just being a pain in the @ss. Had the floats replaced and it worked ok for a week or two. Now I've decided to just buy a new carb. The current one is the one in my sig (Carter 625cfm elec. choke). I can go one of 3 ways. I can get another Carter 625 elec. choke, I can get a standard Holley 600cfm elec. choke, or a Holley 600 double pumper. Any comments? I like the adjustability of the Carter but I wonder if I'm over-carbed. The cam in my sig measures .493"int. .500"exh. lift dur. @ .050" is 218*int. 224*exh. See the signature for my other mods.
