Post Head gasket choice for AFR 165's on N/A combo

AFR recommends the Fel-Pro 1011-2 gasket for '83-'93 5.0's. I've got a '94 GT, but I'm assuming the 1011-2 will be O.K. along with a set of ARP head bolts. What's the deal with the graphite head gasket kits that come with the stock type torque-to-yield bolts? Do you torque these only once? Are they crap? Thanks in advance.
