Angry Temp. Skyrockets After New AC Compressor

Well I FINALLY had my new AC compressor installed and the system evacuated and recharged!!! I was sooo excited, I've spent many a day sweltering at traffic lights in 100 degree 90% humidity weather up until now

Here's the problem: The first night I drove it with the new AC was a relatively cool night, maybe 80 degrees, and within 2 minutes after I started out home, the temperature had shot up from 208 degrees to 240 degrees. I pulled over, and noticed that the fan was on when the AC was engaged, but shut off when I turned the AC off, even though the gauge was still reading 235. I thought the fan automatically engaged at 200 degrees? (It has a stock thermostat, btw) Also, when I popped the hood on the side of the road, the engine didn't seem overly hot, and I had plenty of overheating issues with the original motor, so I know what an overly hot motor feels/drives like, etc.

The next day, I drove it again for about 20 minutes with the AC on, and the temp stayed around 208, which is the normal running temperature since summer started (still running OEM radiator ). One of my friends suggested that either my temp sensor is malfunctioning, or my friend that ran my Autometer temp gauge must have messed up somehow...but its been functioning fine for several months now.

Any ideas??? Seems like I fix one problem, and 3824784 more pop up?!?!?!!
