Dustin I run the exact same fan with a Ron Davis radiator and Stewart water pump and it runs exactly what the thermostat is 180 degrees on my Mech. gauge, in 95 degree weather but I don't have A/C
My first suggestion is get a nice accurate gauge, I like my mechanical gauge because I always know what the temp is whihc helps at the track. The Perma-Cool thermo switch is
JUNK it was supossed to come on at 170 degrees and it never came on unless I let it go to 210 degrees. I went to Advance Autoparts and got the Hays adjustable thermo, for $20 it works great and you can make it come on when ever you want.
Make sure the fan is blowing in the right direction? I know you probably have but I've seen it done
I have my fan wired through a soild state relay, that way I can have the thermo switch and I have a manual switch in dash switch panel I made so I can turn it on manually to cool everything down.
