You can only really use a wideband O2 sensor to do what you're wanting to do. Take it to a dyno facility with the proper equipment and tune it there. We have narrow band O2 sensors which can only sense A/F ratio reliably around the stoichiometric A/F ratio. Readings beyond that wouldn't tell you anything. The computer only guesses on the A/F ratio delivered at WOT based on feedback collected during closed loop mode and readings from the MAF, ECT, ACT, and BAP sensors. Since you've gone with a carb, you just have to keep tuning it yourself until you get it right.
