You could probably splice into the oxygen sensor and get a reading but you'd have to get a voltmeter that reads 0 to 5 volts, which is basically what "air/fuel" ratio gauges are.

I believe that the more oxygen there is in the exhaust the higher the voltage the oxygen sensor generates and vise versa.
