Looking for a Stang that has already been modified would be good for getting a good jomp on the bolt ons, and probably save you a little cash in the long run. But if it were me I would look for a car that hasn't been modified. That way you know what's been done to it, and chances are you won't be getting a car that has been abused as much. Fiveohpatrol (Drew) on this board ran some really good times on his car with very few mods. Talk to him.
As far as reliability, I have never had a 302/5.0 go bad on me. I have owned a few, and every one of them was put through hell. I pulled the heads off of my last one and with over 100k miles it still showed the crosshatching in the cylinders. They are a very reliable engine.
