Question more shortblock questions

Well after weeks of narrowing down between 347 vs 331 and picking a builder, and getting close to ordering a Kieth Craft 331, i've decided to do a little more investigation as to what would be the best route to go.

So this weekend I'm going to take a junk 351w block bolt on my heads and headers and see if it will fit where it needs to in my truck.

So here is my questions:

Does anyone know about 351 strokers? Kieth Craft offers a 357, 393, and 408 which are all the same price. Jason suggested the 408, but i was wondering about rod ratio and life. Should I just go with the 393?

Any info you have would be greatlly appreciated.
