Post Port/Polish Brand New heads

What type of performance advantages would I get by having my engine builder open up my 60CC Eldebrock Performer heads and match them to the Peformer RPM upper and lower EFI intake for my 351W? I heard that the Edlebrock's are great for 302's but don't flow as well when you get above 350 cubes especially if I end up stroking the motor.
