I have put a 351 in my 89 GT. I went to carburetor at the same time. No doubt, I would do it again. Plug changes on #7 and #8 are a little mean, but not bad. I can change plugs in 15-20 minutes.

I think you would be happier with a 351, but it will certainly cost more. Some of your upgrades you want to get, you will still have to get with the 351. Especially if you go EFI. Rear end gears is one.
