Question Thermostats

I will be replacing my thermostat tomorrow and it's a 195. I was wondering if a 160 would be any better? What's the scoop on thermostats? I know the cooler your engine stays the more power you make.

Should I take the 195 back and get a lower one? Or is there even that big of a difference?
