Just used some dye
I am spending the winter restorine the interior of my 85 mustang. I don't know if you are looking for a stock color or something more flashy. But I wanted my interior to look like new again. I got stock color dye from mustangs unlimited. The color matched perfect. You can use the dye on plastic vinyl and some carpets. I used it mostly on plastic. Everything that I have used this stuff on looks perfect. Nothing looks like it has been repainted, it all looks brand new.
If you do decide to do it this, here are some tips that I learned from doing it myself. The only way that you can mess up with the dye is to run it. So don't hold tha can too close when you spray, and put on 2-3 light coats.

The only problem is that in high use areas (like door pannels) the dye will rub off over time.

I'm not sure if there is anything you can do or not. I know there is some new stuff out that isn't supposed to rub off but I can't think of the companys name.

i used vynal interior paint, came out good! only part i regret doing was lacquaring the arm rests, cause it made the paint hard and when the pads get compressed it starts to chip a little.
