Default Stroker Motor or not ?

I am in the planning stages of building a new motor for my 85 GT.
I am mostly gonna use it for fun at the 1/4 mile track and light street use.
My question is about stroker motors. I do not have any experience with them and was wondering what are the positives and especially what are the negatives of building and running this type of engine. Also should i go with a 302 or 351 block.
I was planning on using the TFS TrackHeat heads, TFS #2 Cam, TFS forged pistons, full roller motor., Carb with Perf RPM Intake.
I am hoping for 375 to 400 HP at the flywheel.
