Default what are symptoms of fuel starvations?

I had my '82GT out tonight just messing around and discovered that at high rpms, the engine sputters and acts as if it's on a rev limiter or something.
Is it possible that my carb. is too small for my setup. My setup is in my signature below.
I pulled #1 spark plug and the electrode is clean...no carbon or anything.
What does a lean condition plug look like?
A lot of people are telling to switch to a 750 Holley and single plane intake and I will see even more power and that my intake/carb setup is my bottle neck.

What do you guys think?
