Post Gasket matching

I will be buying heads and intake and had some questions about gasket matching. Correct me if i am wrong. You match the intake port on the heads and the ports on the lower intake to a certain gasket. Now what do i use to see how much needs to be taken out to be matched to the gasket? Is there anything else i can do to get the most out of my combo before i put it on? Heads will be trick flow twisted wedge and intake is the street heat. Thanks in advance.
