You can do just about anything you set your mind to, but unless you have a ported intake manifold, head, better camshaft, header and exhaust it's kind of a waste of time because of the excessively small ports of the 2.3L. Adding a larger Throttle body may not have any adverse effect, but i'd be thinking of ways to improve the airflow of the entire engine as well. Or if it's turbocharged, then no big deal go for it. I don't know for sure, but the designs between the 5.0L throttle body and 2.3L are way different, so if i were you i'd go to a junkyard and try to find a larger engine with a similar throttle body.
I've heard that 3.8L throttle bodies are a much closer match to the design of the 2.3L, plus are a bit larger also. A 5.0L 60mm i believe that is between 2 1/4" and 2 1/2" inside diameter and may kill lowend torque on your 2.3L.
