According to the Mr. Ford web page http://fomoco.com/index.asp?Dept=4&Tool=0 The following options were available in 1968.
C 289 2v
F 302 2V
J 302 4V
Q 428 4V
R 428 CJ 4V
S 390 4V
T 200 1V
X 390 2V

The first letter is the code that is part of the vehicle's vin (easiest place to find is on the driver's door. All but the T are V8 engines. The T is a I6. The 1V, 2V, or 4V are the number of venturies (barrells) in the carb. You can look up the horsepower and torque from the web site I gave. Be aware that horse power ratings in those days was based on the engine only, ignoring losses from the alternater etc and through the drive train. 200 hp in a 68 mustang is only about 140 to 150 hp measured with the current standards.
