When you can buy an offroad H for $125 it doesn't make much sense to gut the factory cats. Either way it will throw a MIL or check engine light when the rear O2 sensors read that the cats are no longer there, it will not effect performance but will be annoying to see the light on. You can get MIL eliminators to get rid of that code from www.mileliminators.com . The car will have more unburnt fuel due to the cats being removed but will not run richer.
P.S. I just pulled my MAC offroad H off the car and is for sale.
