I think it would depend on what you're using it for. If your car is a daily driver I wouldn't stroke it to more than a 331. If you don't drive it much go with the 347. The stroke on a 347 is pretty long and wears prematurely. You'll also have to notch the bottom of the cylinders so the rods can clear. They're pretty much a race engine. The stroke on a 331 is shorter, and although it still wears quicker than a 302 it will last longer than a 347.
It may be easier and cheaper to install a 351 Windsor and go from there.
