The plate under the carb can stay it sounds like it is going to the PCV valve, you may want to check your PCV valve to be sure that it is working properly( shake it to see if the ball inside rattles if it does it is good). The line running to the choke is needed to run the choke system properly. The ports in the back of the mainfold are the ones you need to run the Heter controls, trans modulator. The canister on the fender well is part of the old egr system and is not needed. If the carb is a Motocraft 2100 carb or something similar to it the timed vacume port on it should be near the base in the front of the carb. I think it comes out of the carb at an angle rather than straight out. The way to teel a timed vacume port from a manifold vacume port is timed vacume ports will have very little or no vacume wheh the car is idling and it will increase with engine RPM's. Manifold vacume ports will have more vacume at idle. Once you get everything hooked up plug all the other vacume ports. If you have a vacume port that is not pluged the car will run like crap.
