The 160 thermostat will cause the engine to run too rich. The EEC looks for about 180 degrees to run the proper mixture.

Running rich (and colder) will have some effect on power but you're also thinning out your oil and doing internal damage to the engine for a very small power gain.

The 5.0 engine runs best at around 200 degrees. The Ford thermostst (192) keeps it very close to that temperature.

I strongly suggest you invest a few bucks in a Ford thermostat (good quality) and the time to install it. Your engine will thank you.
