Last fall I installed the following:
Termec 3550
King Cobra Clutch Kit
McLoud Steel Bellhousing
Fidanza Aluminum Flywheel
My clutch pedal effort actually increased (probably because it was new) but it is about the same as the stocker setup now that I've broken it in.
I think your problem may be in the UPR clutch cable kit. I re-used my stock cable set-up and clutch fork without any issues. Are you sure you've got the cable routed through the bell opening properly? (the guide thing is what I'm referring to)
As for trying to move (depress) the clutch from underneath the car, it is hard to do as you don't have much leverage - but you should be able to depress it.
One other thing - when you installed the clutch, did you ensure that you tightened the bolts in a crossing pattern to give the 'forks' an opportunity to seat properly?
