Edelbrocks are very, very high quality products. You'll be happy with either an Edelbrock or Holley carb. There is nothing wrong with either one. Since the Edelbrock is cheaper, I'd go for it too. It's like $210 for a 750 manual choke outta Summit....
I have a 750 manual choke Edelbrock carb, Performer RPM intake, 224/234 duration @ .050, .496/.520 lift @ .050, stock heads (huge bottle neck, planned on having new heads soon after cam/intake/carb upgrade, but it hasn't happened yet

My cam/carb are too much for my heads right now, but someday I'll upgrade to either Performer RPM or TFTW heads and everything will be just great...
A Edelbrock manual choke 750 would work great for you--period.
