Anytime you move to a lowering spring you're going to lose some of the ride quality. It also depends on the shocks you select... some are smoother than others.

I'm running Eibach springs and the front dropped perfectly. The rear still sits a little high, but I have a coupe and there isn't much weight over the rear (I also have 2 10-inch subs in a box in the trunk). I'm a big fan of Eibachs and I suspect they would work perfectly on a convertible. The Eibachs really don't plant the car in the weeds. Just make sure you're tires aren't too tall (that's with any set of springs).
