Default Clutch Decision for T-5

Hey guys,
I recently acquired a T-5 transmission for my '65 coupe w/289 v8, and I have a friend who can have a clutch made to my specs for very cheap. I'd like to know what you're experiences are with this swap and the clutch that you all have used. Centerforce, Ford Stock?, Hayes, or any other brand for that matter. Essentially what is it that you liked about the clutch that you are using (used) and how does it fell when pressing the clutch pedal (easy or hard).

I am going to go with a clutch cable setup, so what do you all recommend. When all is said and done, I will have a rebuilt 289 built for low- and mid- range power, so the clutch should be able to take some 275+ ft lb of torque! What do you all think?
