The reason to buy an aftermarket tach is they have a larger face and are easier to read, and if you mount them in the right place you don't have to look down away from the road to watch your revs. For drag racing it might not be as important but when I am attacking the twisties at the limit I can't afford to look down at the tach in a corner.
The only tach mounting kit I have seen for newer stangs is made by Paul's High Performance, but it mounts it on the dash to the right of the steering wheel, which you mentioned might block your vision a bit. http://www.paulshp.com/paulshp.htm
As for what kind to get, I light AutoMeter or Ford Racing tachs.
You also need a tach adapter to put one in a 99+ Mustang. You can get one at Dallas Mustang for around $50.
