How many mile on the vic 5.0? Was it a police package? I would say if your thinking about rebuilding it anyway, you could upgrade to better than stock performance for not much more than a straight rebuild.
You could also sell the car/trans/rearend as ashell, and make back some of the money, and use it toward either motor. I would say that if you have the space, keep the motor, you never know when it might come in handy. This also gives you the option to build it slowly, without loosing the GT as transport.
