Sounds like you've got quite a bit of stuff.
You say you've got a 302 Clevor? Don't know if you know it or not, but the Clevor is a 302 Windsor with Boss 302 or 351 Cleveland heads. To get the real usage out of that setup, the 302 would have to be built as you're talking a setup that should spin to maybe 8000rpms or so to use those heads fully.
The 289 Hipo is a great little engine. It's very similar to the 302, just with a little less bore.
The 351's can be made to perform well, depending on the year, you may have to do a bit to get them to run fast.
If the 302 is not built, I would be much more inclined to swap the cleveland heads onto one of your 351's, they'll be able to use the heads much better as the stock 302 windsor isn't built to take 8000rpms. The 351 you could spin to 6500 and really get those cleveland heads working, while the 302 would benefit from the 351 windsor heads over the stock units it came with.
It would be kinda cool to put a 351C into the 1967 Coupe. What kind of shape are the cars in? Sounds to me like you could get some money to finish one up real nice by selling off some of the others.
