I have 351 heads on my 67 mustang (which has an'89 302.) Use a 1974 or older head to get the small chambers (60.4 cc) and Large valves (1.54/1.84.)
Stepped washers are available to allow use of the 289/302 bolts, but they're not especially cheap. Cheaper than the bolts, though.
'72-74 heads have induction hardened seats, so these won't be bothered by unleaded fuel.
The only problem I have had is that the studs may pull out if too radical a cam is used (I had mine pinned to prevent this.)
Remember, with the larger intake ports and larger valves, any cam you choose will be accentuated, so don't go too wild (I used a motorsports E303, .498 lift)
You'll enjoy the increased mid and upper range hp. Even more so with a slight porting of the exhast outlets (don't go crazy, just get rid of the pollution control "bumps" and open up to gasket size.)
