I can't speak for the groove on the crank side but all the gaskets I have changed are smooth on the pan side. This smooth surface will contact the raised portion of your pan and provide a good contact seal with not much torque.
The groove on the upper side might be there to get by a pin that used to stick out in that groove to keep it from spining Either way you bought the best gaskets made Fel-Pro.
