To be honest, I would just go with a stock rebuild. Unless you have a radical motor, changing the jet size won't give you any noticeable power. There are all kinds of little tricks to mess with but a stock 600 cfm carb with that 289 should be plenty. The MSD coil shouldn't burn up anything. I ran an accel super coil with my old points distributor before my msd and it worked fine.
You may get a different opinion about the carb as there is always arguments about carb size and tuning but a fresh rebuild will probably do wonders alone without trying to trick it out or anything. Just my $.02
