How you set them all depends on your spring rate and how stiffly damped you want it. Ideally the shocks and struts should damp the springs enough that the car does not bounce at all, but also not overdamp such that it gives a harsh ride and does not let the springs do their job.
I have my fronts set on 5 (350lb/in coilovers = >800lb/in in stock location) and my rears on 4.
If you have stock springs, 3 should work pretty well.
