I am going to disagree and say go w/ 4:10's. The 4R70W is a wide ratio trans, so the gears won't have the same negative affect on gas mileage as the old AOD's. I mean, of course you will lose a few mpg over 3:27's, but do you want good acceleration or 2 extra mpg? The difference in mpg between the 3:73's and 4:10's would be so small too, its worth getting the steeper gear IMO.
The only advantage I can see about getting 3:73's would be less tire spin on launch. but agian, the difference of the two gears would be minimal.
