When I wanted to find restoration info about my mustang I picked up a parts catalog (like the paddock, or national parts depot) and looked under the literature section. They have a selection of the best restoration books written about stangs. They also have more topic-specific books about things like painting your car or doing engine or interior work.

I'm starting to collect quite a few of these books myself. One of my favorites is the "Mustang Restoration Handbook" by Don Taylor and "Mustang Restoration Tips and Techniques". Don't forget to pick up a trusty shop manual while you're out. This book is indispensable, and worth it's weight in gold when trying to figure out how put something back together or diagnose a problem. Good luck and have fun!
