Default IAC Disconnect?

I've heard from several people that disconnecting the IAC valve on an EFI 5.0 will give it a really quick, carb-like rev. First off, is this accurate? I had the engine off and disconnected the sensor clip to the IAC, started it....nothing was different. Still revved normal. Am I missing something? And as a side note...are there any negative effects to disabling the IAC valve, besides a funny idle and an occasional stall here and there maybe?
