Question ac and over heating

I just drove from Nebraska to La. and i noticed a few things along the way. First thing is that the car seems to run right at 205-210 degrees the whole way. This may be because I added a hotter thermo since it was winter in ohio. But even then the hottest it would be is 195 (which it likley is). Would the car run 10 degrees hotter then what the thermo is rated at?
I havent tried replacing the cap ot thermo or anything yet. But the mixture may be lopsided in favor of the antifreeze. Will that cause it to run hotter?

The other thing I noticed is that when i run the ac, the temp jumps to 230 and that sux, then it takes an eternity to cool down after i turn ac off. This all while driving on the interstate. Any ideas?
