Who is the better V8 engine? (302 , 351C or 351W)

I'm from Brazil, and I will import a engine to make my Cobra Replica.
I don't understanding nothing about engines... lol
So who is better engine 302 or 351W, and what is the difference between HO and Non HO engine.

Do you know what is a good transmission for these engines? And where I could find?
