Default Help tuning carb!!!

ok heres the deal, when i bought this car, it was a stock 5.0, with wiend intake and a holly 600cfm carb, i dont know if the jets have been changed, but since then i have added all the mods below. When im cruising in 5th gear and give the car a little gas to accelerate, it hesitates then goes and i can smell gasoline, and when i rev the car up from idle, it hesitates also, that leads me to think that i am flooding the engine. I dont know wht size jets are in the car, but im planning on buying some new ones and a new power valve, any suggestinos? Also, sometimes when i rev up a little, no too high, it pops a little in the intake, could this be from too much fuel, my cam does have overlap, or is it just timing related, i cant remember what i set it at, but im going to play with that tommorow. any help or suggestions are appretiated
