Default options for a stroker in a '66 fastback

Recently a friend asked me to help him with an engine build for the '66 fastback he recently acquired. So far it looks like it's going to be a 351w stroked to 408, naturally aspirated and carb'd, with compression in the 10:1 range. We're hoping for good power up to 6000 rpm. the heads I'm thinking of going with are the AFR's in either 185cc, or 205cc. would 205's be too big for good torque? Also, anyone have a (preferably roller) cam they have used and liked in a similar build? a little muscle-car idle would be a definite plus in the cam.
